"I remember thinking, understanding and not having the language to use that if you open up your own business it is your opportunity to truly put your stamp on the business. And part of my stamp were values related to quality. Quality of service, quality of product, quality of place. None of that I couldn't have said 37 years ago. I could not have used those words. But that's what I was doing," says Cafe Patachou founder Hoover.
